Blueberry Streusel Muffins

Blueberry MuffinsI baked mine in heart shaped cupcake pan, a sweet pairing for my morning coffee. I’m proud to say this recipe is a Cottage Cupboard Original, I hope you like it!

Preheat the oven to 400 degrees and wash, DRY and toss 1 cup+ of blueberries with a few tablespoons of flour.
Make your streusel next: 2 tablespoons AP flour + 3 tablespoons brown +2 tablespoons white sugars + 2 tablespoons  COLD diced butter. Mix to a grainy, small-chunk consistency, store in fridge while making muffin batter.

Muffins!: 3 cups AP flour
1 1/2 cup sugar
1 tsp salt
4 tsp baking powder
2 tsp cinnamon
2/3 cup milk
1/2 cup butter
1/3 cup vegetable oil

Stir, add flour-coated blueberries and sprinkle streusel on tops. Bake for 12-15 minutes or until edges begin to brown.

This recipe makes 24 regular muffins and 16 minis. This is a lot of muffins, so we share and we store in the freezer.
