I can’t make the champagne at home, but the mousse, by golly…. it’s great!
An abbreviated recipe, check out the instructions at All Recipes:
- Whip 2 cups heavy cream to light peaks, refrigerate
- Whip 4 eggs and 2 tablespoons of sugar
- Make 1/4 cup of strong, hot coffee
- Melt the chocolate, add coffee
- Stir egg mixture into chocolate, fold in cream
- Refrigerate 2 hours (overnight is best)
