Banana Bread

Banana BreadOne of my favorite things my Mom used to make, adapted a few times over:

4 tablespoons unsalted sweet cream butter

2 eggs

2/3 cup sugar

1 1/3 cup AP flour

3/4 teaspoon salt

1/2 teaspoon baking soda

1/4 teaspoon baking powder

3/4 teaspoon cinnamon

1/2 teaspoon pumpkin pie spice

1/4 teaspoon all spice

1/2 teaspoon vanilla

mix thoroughly

fold in 3 overripe bananas

toss in 1/2 cup chopped walnuts

Bake 350 degrees- check it when your nose tells you to, pull it out when a toothpick comes out mostly clean. Though it should be moist, it shouldn’t be gooey.

Loaf pan: 35-45 minutes

Muffin pan: 16 minutes

Mini muffin pan: 12-14 minutes
